Carnivore Pasta

 Today I made carnivore pasta. No flour, no grains. It was easy and delicious.




Recipe:

3 tbsp Pork Panko

1 tbsp grated Parmesan cheese

3 eggs

3 tbsp cream cheese

Herbs to taste


Put the panko and the Parmesan in the food processor. Process for 30 seconds to make sure the crumbs and Parmesan are the same consistency. Add the eggs, softened cream cheese and herbs. Process until smooth. Mixture will be very thin. 


Pour out onto a silicon baking mat placed inside a large baking sheet. Use a spatula to smooth out the batter until it is as thin as possible.


Bake in a 350 degree oven for 10 minutes, or until the edges start to turn golden brown. Remove from oven. Let cool a couple of minutes. Sheet of cooked batter will easily peel away from silicone mat. Place on cutting board. Use pizza cutter or knife to cut sheet into noodles. Store noodles in airtight container in the refrigerator until ready to serve.

Keto Fathead Pizza

 

This is the best pizza ever! Having made regular pizza dough before, this is so much faster and easier. 

Dough: 

10 oz shredded mozzarella cheese

5 oz almond flour

1 egg

1 tsp baking powder


Place mozzarella in microwave safe bowl and heat in the microwave one minute. Add one egg and mix together. Add almond flour and baking powder, mixing well. It’s easier with an electric mixer, but can also be done by hand. If after kneading the dough together by hand it is still too oily, add a little more almond flour and kneed until it feels closer to regular dough.

Roll out between two sheets of parchment paper and transfer to baking sheet. Place in 400 degree oven for 5 to 7 minutes to set the crust. You will notice the crust puff up a little in the oven. Add toppings and bake for 10 minutes.

You will notice that the dough spreads out a little during cooking. So when adding toppings, my advice would be to pack the toppings close together because they are going to spread out. The pizza in the picture could actually have used more pepperoni, but when the pepperoni was added, it was close together and spread out in the oven. 


No matter what it looks like, it was delicious!

Scalloped Ham and Asparagus

 

Ingredients:

1/2 bunch asparagus, cut in 2-inch lengths

1 lb. ham, in small chunks

2 eggs, whisked

1 cup heavy cream, 1/2 cup water

2 cups shredded cheddar cheese

1/2 tsp garlic powder, 1/4 tsp pepper


In a deep dish pie plate, combine ham and asparagus. Whisk together eggs, cream, water, one cup of shredded cheese, and spices until smooth. Pour over ham and asparagus. Hopefully the liquid almost covers the ham and asparagus. This will depend on the size of the pie plate, and whether or not you estimated the amount of ham and asparagus. It’s okay if a few little tips of asparagus poke out. But if it is seriously not enough liquid, whisk another egg and a little cream and add to the mixture.


Bake in 350 degree oven for about 30 minutes. The eggs will only be soft cooked, so it makes a nice thick sauce. If you cook it longer, it will be more like quiche. Which is fine, but I like it to be more like a sauce.

You could also add some onions or shallots, or bell pepper. But this is very simple and delicious. 

Remove from oven and turn off heat. Sprinkle the remainder of the shredded cheese on top and allow to melt.


Only 3 carbs per serving.

Review of Primal Kitchen Mayos

 


Primal Kitchens is the first choice for commercially made mayonnaise. Why is that? Because most mayonnaise contains sugars and industrial seed oils. Of course, on the keto diet we are trying to eat as little sugar as possible. But what's wrong with industrial seed oils, and what are they? 

Industrial seed oils are vegetable oil, corn oil, canola oil, soybean oil, safflower oil, sunflower oil, peanut oil, etc. These oils are highly inflammatory. If one of your goals is to reduce inflammation in your body, you will want to avoid these oils. They are very unstable and subject to easily being degraded by free radicals. They are also too high in omega 6 fatty acids and linoleic acid. The only fats you should eat on kept are those with linoleic acid content lower than 20%. That would mean the approved keto fats are animal fat, coconut oil, MCT oil, olive oil or avocado oil.

If you have ever looked the label of most commercial mayo, they are almost all made with soybean or canola oil. Even the ones that say they are made from olive oil aren't 100% olive oil, but also include some canola or soybean as well. So they are unacceptable.

The Primal Kitchens mayo have all clean, healthy ingredients. If I don't have time to make my own mayo from leftover bacon grease, these are the ones I buy. 

They both taste great, although I think they have a little more vinegar than is my personal taste, but still good. 

Later I will include a recipe made with leftover rendered bacon grease, in case you want to try that.

Keto Pasta-Free Lasagne

 


The purpose of the lasagne noodle is simply to separate the layers of the lasagne. You can do the same thing with sliced meat. Sliced chicken, roast beef, ham or turkey. In this recipe, I have used Boar’s head rotisserie chicken cliches.

Preheat oven to 350 degrees.

Ingredients:


1 pound ground beef (or Italian sausage), browned and drained

1 chopped green pepper

1 jar Rao’s Homemade Pasta Sauce, or other low-carb alternative

2tsp dried basil (can substitute fresh)

2 tbsp stevia powder

2 eggs

1 cup cottage cheese

2 cups shredded mozzarella

1/2 cup shredded Parmesan 

Garlic powder to taste

1 package Boars Head Rotisserie Chicken Slices (or roast beef, ham or turkey)


Double the recipe for a 9x13 inch casserole dish. This recipe is for a small casserole dish, possibly a 9 inch square pan. 


Line bottom of pan with chicken slices. Brown meat in skillet and drain. Combine meat, green pepper, pasta sauce, basil, and stevia powder. Simmer while making cheese mixture.


In bowl, combine eggs, 1 cup mozzarella, cottage cheese and Parmesan cheeses. Whisk together.


Layer meat sauce, then cheese mixture, sprinkle with garlic powder, add another layer of rotisserie chicken slices. Layer the rest of the meat sauce and cheese mixture. Cover top with the rest of the mozzarella. Sprinkle again with garlic powder. 


Bake for 30 minutes. Check to see if cheese is melted and browned as much as you want. If not done enough, leave in another 10 minutes.


Remove from oven, allow to cool at least 10 minutes before plating. Sprinkle top with more dried or chopped fresh basil.

Keto Pecan Vanilla Custard

 

   


As followers of the Ketogenic lifestyle, we don’t get to eat pudding. The thickening ingredients required to make pudding have too many carbs, and the ingredients aren’t keto approved. The next best thing is custard. It’s easy to make and delicious. 


Ingredients:

3 eggs

1/4 cup Brown Sugar Swerve

2tsp vanilla extract

1 cup heavy cream

1 cup unsweetened almond milk

1 tsp cinnamon

1 cup chopped pecans


Combine eggs, Swerve, and vanilla in mixing bowl. Whip on high for two minutes. Add half the heavy cream and continue to whip. Add remaining cream and almond milk. Continue to whip for another minute. Pour into greased pie plate or casserole dish. Sprinkle cinnamon and pecans on top. Place dish into water bath with water coming up halfway around the dish. Bake in 300 degree oven for 1 hour and 30 minutes Remove from oven and from water bath, let cool at least 15 minutes.
