Broccoli and Ham Cream Cheese Crumble


Although this is a keto-friendly recipe, non-keto cooks will find it decadent and delicious.

Ingredients:

16 oz. broccoli florets, lightly steamed
1-8 oz block cream cheese
1 tsp. mustard
1/2 tsp. Worcestershire sauce
1/2 tsp. garlic powder
1/4 cup heavy cream or half and half
1 egg
2 cups cubed ham (or Spam)
2 cups pulverized BBQ flavored pork rinds
1 cup shredded sharp cheddar cheese


Combine broccoli and meat in casserole. Melt cream cheese in microwave until soft. Mix in heavy cream, mustard, Worcestershire sauce, garlic, and one beaten egg. Pour over broccoli mixture. Put pork rinds in a bag and pulverize them by hitting bag with a rolling pin until they are in small pieces. Sprinkle cheese over top of casserole, then top with crumbs. Bake in 350 degree oven for 25 minutes or until Cheese is melted and casserole is bubbly. Oven times may vary.

If you like more sauce, you can add more cream cheese and/or half and half until you have the desired amount of sauce.

Review - Just the Cheese Bars

In the category of Keto Snacks are Just the Cheese bars. They have basically no carbs, and the only ingredient is cheese, baked until it’s crunchy.  The Jalapeño flavor also has jalapeños in addition to cheese. You get two in a package and it reminds you of a granola bar. Tastes delicious and very convenient. I have also used them as a substitute for chips with dip. I have nothing bad to say about them except they are a bit pricy, but what Keto product isn’t. I suppose you could bake some cheese yourself; I’ll try that one day. But today I’ll just enjoy the crunchiness.

Survival Meal

Last night we had biscuits and gravy for dinner. There was about half a saucepan of gravy left which I saved until the next day. Right now we are on self-imposed quarantine because of the Coronavirus, and the grocery store shelves are pretty bare.Making food last is important right now.

What could I do with this leftover gravy? There really wasn’t enough left for two people to eat a meal. I decided to turn it into potato soup.

Gravy is very thick, especially when it has solidified during the night. I added about 2 cups of water and brought to a boil. Snipped in some fresh green beans for color and cut into quarters about a dozen small fingerling potatoes. Allowed these to boil for about 15 minutes until the potatoes were soft. Spooned into bowls and topped with some bacon bits and some French fried onions left over from the last time I made green bean casserole. And voila! A meal

Review - Gardein Sweet and Sour Porkless Bites

Since my husband and I are trying to eat less meat, tonight we tried these Gardein Porkless Bites. Buy them by the case at Amazon

After baking them in the oven for 17 minutes, they are drizzled with a tasty sweet and sour sauce. Without the sauce, they aren’t spectacular, but with the sauce, they are quite satisfying.

One serving is 9 bites, at 160 per serving, 12 g of protein, 22 g of carbohydrates. 

We served this with steamed sweet potato and rice for a very satisfying meal. 

This is not a product for those trying to eat gluten free or low-carb.

Review - Cirkul Flavored Wayer Drinks



Cirkul is a subscription service you can join to receive a minimum of 8 flavor cartridges per month for $27.  They are all sugar free and most are quite tasty.

The only disappointing thing for me was the number of bottles of flavored water each cartridge makes. The website says each one is supposed to make six bottles. but I have yet to get six bottles even when turning the setting all the way down. 

Other than that I have no complaints.

Review - Swerve Chocolate Cupcake Mix



This mix makes exactly 12 cupcakes. They don’t rise a lot, so if you want them taller, cut it down to 9 and fill them a little more. 

Each cupcake has only 3 net carbs. Very chocolatey, like dark chocolate, so not extremely sweet. But still satisfying to someone who rarely gets bread or sweets. 

A great addition to this would be some chopped pecans. In icing them, we tried an organic chocolate frosting with 8 carbs per serving, some Hershey Sugar-free syrup with 3 carbs, or some peanut butter. I have to say, I preferred the peanut butter as it provides a nice counterpoint to the strong chocolate flavor.

Easy after Christmas Taco Casserole



This dish starts with cornbread on the bottom. Now if you are doing keto or trying to reduce your carbs, start this with a recipe previously posted on our Facebook page for keto cornbread. But if you’re not counting carbs, a simple Jiffy Corn Muffin Mix will do. One box of Jiffy in a small cast iron skillet makes just the right amount.









After the cornbread comes out, just open a can of Pace Taco Complete.










Spread the Taco Complete over the cornbread.














Top with shredded sharp cheddar and place back into the hot oven for five minutes, or until the cheese is melted. Top with salsa and serve.
